Grand Copthorne Waterfront Hotel Unveils Borderless Sunday Brunch




The Grand Copthorne Waterfront Hotel’s new Borderless Sunday Brunch is arguably the best brunch in town. This novel concept combines the best of the three new F&B outlets, interactive buffet restaurant, Food Capital, contemporary Italian grill, Grissini and dynamic bar, Tempo. The dining concepts were launched in June this year, replacing the former Café Brio’s, Pontini and The Piano Bar after a $17 million makeover. The brunch is termed ‘borderless’ as all three outlets are part of the hotel’s spanking new dining destination located at the lobby and you can indulge in food offerings from all the outlets, giving you THREE different unique experiences in THREE hours!

The passport cum map 

Diners are presented a passport which gives them access to all three outlets the minute they arrive at the restaurant. The passport includes includes a map of the various food available at the fifteen different stations including the foie gras, dessert, tandoor and curry, Western, Chinese wok delights, seafood, antipasti and Josper stations. At an unbeatable price of $98++, the brunch buffet is definitely a steal! Top up an additional $40++ and you’ll get to enjoy unlimited servings of Perrier-Jouët Grand Brut Champagne, Strongbow Ciders and house pour wines, juices and soft drinks. During the first three weeks of the launch (28 Aug, 4 Sep and 11 Sep), the buffet is priced at only $88++.

Fresh seafood

Starting with Food Capital, my favourites are the fresh seafood, sushi and sashimi.

Pan-seared foie gras

The foie gras which is pan-seared à la minute is irresistible too.



If you like cheese, you must go for the assorted cheeses which include taleggio, mozzarella, parmesan, fruit and herbs and cranberry.

Different varieties of smoked salmon

At the cheese corner, there is also an enticing selection of breads and smoked salmon such as oak smoked, Applewood smoked, Thai cured, salmon pastrami and salmon gravalax.

Delicious tandoori lamb

For those who like lamb, the whole tandoori lamb is a must-try. It is well-marinated and the meat is tender and flavourful. From the Chinese and local station, you must try the signature laksa which is rich, tasty, aromatic and full of body. The chefs are pretty generous with the prawns and cockles too. Another item which deserves a mention is the prawn noodles soup which is simmered with pork rib and prawn heads, giving it a tantalising sweet flavour.

Other popular favourites include the chilli crab with crispy Szechuan mantou and black pepper slipper lobster.



The rotisserie station features a good selection of meats such as the herb marinated prime rib, BBQ veal rib and pork rib. Other western delights to look forward to include the truffle mashed potato, baked scallop thermidor with brandy flavoured butter and pan-seared seabass fillet with pineapple salsa and herb tomato coulis.

Moving on to Tempo, you get to relish cocktails crafted by mixologist Darren, Perrier-Jouët Grand Brut Champagne, Strongbow Ciders and house pour wines if you wish to top up the additional $40++. At Tempo, you can also relax to live music ranging from pop to Top40s to retro.

The refreshing slush

 For me, my favourites are the icy cold ribena and mango slush.

Succulent meats grilled to perfection

Moving on to Grissini, the highlights are the premium grilled meats and seafood at the Josper oven station. The Josper oven is fired by charcoal and flavoured wood to bring out the aroma, texture and flavour of the ingredients. What is most amazing is that meats which are grilled in the oven come out crisp on the outside and moist and juicy inside. The must tries are the tiger prawns, wagyu ribeye, rack of lamb, chicken and octopus.

What I really enjoyed from Grissini and the antispati and charcuterie selection and the pastas and pizzas prepared live at the open kitchen.

Melon with Parma ham

I love the assorted homemade bruschetta, grilled capsicum, zucchini and artichoke and melon with parma ham.

The noteworthy pastas and pizzas include artisanal linguine with fresh boston lobster, tagliatelle Bolognese and penne arrabbiata, Bianca pizza (black truffle paste, mozzarella, aged bacon, cream sauce and fresh basil) and Salsiccia & Broccolini (Italian pork sausage, mozzarella, cream sauce, sautéed garlic, broccolini and shaved parmesan).

The desserts are pretty and exquisitely assembled.

Nyonya kuih

Go for the chocolate peanut brownie with caramel, baked cheese cake, vanilla crème brûlée, assorted chocolates and the Nyoyna kuih.

Children's corner

In addition to the food, another highlight of this brunch is that it is child-friendly with a dedicated corner for children and a balloonist and face painter to entertain them.
